Grandma Belcastro cooked up this delicous dish for family. You can make it as a delicious localvore side dish.

* 1 or 2 zucchinis, preferably small, sliced into 1 inch pieces ( Dutchess Farm)

* Marinara Sauce from Gordon's Pond (Shrewsbury)

* 1 raw egg

* Grated Cheese

* Salt and Pepper to taste

Steam or boil the zuchinin until tender. Do not overcook as they will fall apart. Put them in a pan with the marinara sauce and heat. Drop a raw egg into the mixture after the sauce heats up and immediately mix thoroughly. This will give the sauce a lighter color. Grate your favorite local cheese and stir until all is blended. All ingredients were obtained at the Rutland Coop. This recipe depends upon zucchini being inseason.

Mmm. Try grilling the zucchini for a bit more color and bite. Use one zucchini and one yellow squash for even more color.
